Cauliflower Rice: Fajita Bowl

Cauliflower rice is THE thing at my house right now! It truly mimics the taste, texture, consistency of white rice but with all the nourishment of cauliflower. We make Fajita bowls, pilaf, Cajun rice, and make-your-own Chinese take-out with cauliflower rice.

What is best about this form of rice, it is packaged in a frozen steam bag. Heat the bag in the microwave for approximately 4 minutes (check bag for instructions). It is ready for the plate!

Fajita Bowl

  • 1 lb chicken or shrimp or beef
  • 2 cups Bell Peppers and Onion
  • 1 tablespoon Taco seasoning
  • Extra Virgin Olive Oil
  • Cauliflower Rice

In a non-stick skillet, heat Extra Virgin Olive Oil. Add chicken, shrimp, or beef. Cook meat thoroughly. Once meat is cooked, remove from skillet, set aside. Add bell peppers and onions to skillet until lightly browned. Add meat back to skillet. Add 1 tablespoon taco seasoning. Mix until meat and veggies are covered with seasoning. Turn heat down to low on stove. Heat cauliflower rice in microwave.

Add cooked cauliflower rice to bowl. Top with meat and peppers. Dinner is ready!

Optional: Top with Fage 2% Greek Yogurt (really does taste like sour cream but with better nutrition). Add salsa that is low in sugar or no sugar! Another great Addition is Tabasco Chipotle hot sauce. (Not paid advertising).
